I watched this video some time ago and IIRC someone pointed out that the piece that hits the rider is just a hose or some other plastic/rubber part and, luckily, not a piston. That would have been awful indeed.
You can see by how the piece rebounds on the floor that its not made of metal, also it’s not his hand

Brock Davidson aboard one of the very first electronic fuel-injected, nitrous oxide-injected motorcycles in 1999. The Suzuki GSX-R750 was a true 750cc producing, 120 RWHP, but added an additional 150 horsepower when the nitrous was added via a switch in the clutch lever. The bike was launched off a two-step launch controller at 11,700 RPMs, and shifted at 15,000 RPMs thanks to an all titanium superbike head on loan from Yoshimura. On a perfect pass, the bike would run 8.0s at close to 175 MPH... But, if the clutch and nitrous combination was not perfect, a ‘hiccup’ could cause the fuel and nitrous mixture in the air box to violently ignite as shown.
1999 was a ‘learning’ year as you can see from this video. Brock suffered numerous tank-lifting backfires, and eventually began wearing a bulletproof vest. Brock went on to capture the 2000 AMA Dragbike Superbike National Championship over his Kawasaki factory-backed rivals, Rickey Gadson and Rob Muzzy. After that accomplishment, Brock returned the bike to stock and sold it, vowing to never let anyone risk riding the bike dubbed, ‘The Super Bomb.’

Yeah it is actually just the tank cover that hits him, but it did crack his sternum.
